Our bees have a very limited time to work the blossoms, and one bad spell of rain during the bloom can cut the year’s harvest dramatically. Some years we simply have less Robinia honey to sell, and we would rather sell less than blend it with anything else.

What Does Robinia Honey Taste Like?

Here is the explanation: honey crystallizes when its natural glucose separates out. Robinia nectar happens to be unusually high in fructose and low in glucose, so it resists crystallizing for months, sometimes over a year, while remaining completely raw and pure. Slow crystallization in Robinia honey is a varietal trait, not a red flag.
